Coconut Cilantro Rice

This rice is wonderfully creamy and a great addition to any Indian, Caribbean or Thai main course. Add a generous helping of cooked beans to it and you have a filling meal all on it's own!

 

1 and ½ cups water

½ cup full-fat canned coconut milk

1 clove garlic, minced

3 tbs. chopped fresh cilantro

pinch of fine grain sea salt

1 cup brown or brown basmati rice

 

Add first 5 ingredients to a medium sauce pan and bring to a boil. Add rice and stir. Reduce heat, cover and simmer 35-40 minutes until liquid is absorbed and rice is tender. Fluff with a fork and serve
